Crusted Veal Roast
|Veal roast||5 Pound (1 Roast, 3 To 5 Pound)|
|Prepared mustard||1⁄3 Cup (5.33 tbs)|
|Garlic powder||1⁄2 Teaspoon|
|Onion||1 , chopped|
|Brown bouquet sauce||1 Teaspoon (Commercial)|
Place veal roast, fat side up, on a microwave roasting rack placed in a flat glass baking dish.
Combine remaining ingredients.
Brush roast to coat with the sauce.
Cover loosely with waxed paper.
Microwave at MEDIUM half the total estimated time.
Rotate dish 1/2 turn.
Microwave at MEDIUM the remaining half of time.
Check for doneness by inserting standard meat thermometer in meat at side.
It should read 160Â° and will rise to 170Â° after standing.
Remove thermometer and return to oven if more cooking is desired.
Let stand, covered, 10 to 20 minutes before slicing.
Brush roast with remaining sauce and slice thinly to serve.
