Easy Veal Parmigiana
|Diet margarine||2 Tablespoon|
|Veal patties||1 1⁄4 Pound, frozen (6 Patties, 1 Package)|
|Canned italian tomatoes||17 Ounce (1 Can, 1 Pound 1 Ounce)|
|Instant minced onion||1 Tablespoon|
|Crumbled oregano||1 Teaspoon|
|Crumbled basil||1⁄2 Teaspoon|
|Seasoned pepper||1⁄4 Teaspoon|
|Shredded low fat mozzarella cheese||4 Ounce (1 Cup)|
|Grated parmesan cheese||3 Tablespoon|
1. Heat margarine in large nonstick skillet; brown veal patties, about 3 minutes on each side; remove as they brown. Cut each patty in half and set aside on paper towels.
2. Add tomatoes to same skillet, mashing with a fork. Stir in onion, oregano, basil, salt and pepper. Cook, uncovered, stirring often, 5 minutes, or until slightly thickened.
3. Arrange veal, in sauce in skillet; sprinkle with mozzarella cheese, then with Parmesan cheese.
4. Cover; cook over medium heat 10 minutes, or until cheese is melted.
