|Veal rib/Loin / sirloin chops||4 (3/4 Inch Thick)|
|Prepared mustard||3 Tablespoon|
|Diced bacon||1⁄2 Cup (8 tbs)|
|Light cream||3⁄4 Cup (12 tbs)|
|Drained capers||2 Tablespoon|
Heat oven to 350°.
Season chops with salt and pepper; spread both sides with mustard.
Place in ungreased square pan, 9x9x2 inches.
Sprinkle bacon on and around chops.
Bake 1 hour 15 minutes.
Place chops on warm platter; keep warm.
Drain all but 1 tablespoon fat from pan, leaving bacon and mustard in pan.
Stir in cream and capers.
Heat to boiling, stirring constantly.
Reduce heat; simmer 10 minutes or until sauce is consistency of thin white sauce.
Pour sauce over chops.
