Veal Chops Savoyarde
|Veal chops||4 , trimmed of fat (3/4 Inch)|
|Dry vermouth||1⁄4 Cup (4 tbs)|
|Black forest ham slice||4|
|White sauce||1 1⁄4 Cup (20 tbs), heated|
|Grated gruyere cheese||1 Cup (16 tbs)|
? Heat butter in large frying pan over medium heat. Add chops and cook 4 to 5 minutes. Turn chops over, season and continue cooking 4 to 5 minutes; adjust time depending on size.
? Transfer cooked veal to baking dish. Pour vermouth into frying pan and cook 1 minute over high heat; pour over chops. Cover each with slice of ham, layer of white sauce and layer of cheese. Season and sprinkle with paprika.
? Broil 3 minutes to melt cheese, and serve.
