Herbed Shoulder Of Veal

Ingredients
  Veal shoulder 1
  Chicken stock 1⁄2 Pint
  Salt To Taste
  Butter 1 Ounce
  Onion 1 Small
  Breadcrumbs 4 Ounce
  Chopped parsley 2 Tablespoon
  Lemon rind 1 Teaspoon
  Mixed herbs 1 Teaspoon
  Salt 1 Pinch
  Pepper 1
Directions

Fill shoulder with herbed breadcrumb stuffing; tie firmly into shape.
Place in baking dish with stock, salt, pepper and butter.
Bake in moderate oven, Mark 4, 350°F., basting frequently, allowing 30 minutes per lb.
Stuffing Saute chopped onion in melted butter; mix with breadcrumbs, parsley, grated lemon rind, herbs, salt and pepper.
Beat egg, add to the mixture, and stir until it binds together.
