|Veal steak||1 1⁄2 Pound (1/4 Inch Thick)|
|Bread crumbs||1⁄4 Cup (4 tbs)|
|Onions||1⁄4 Cup (4 tbs), finely chopped|
|Celery||1⁄4 Cup (4 tbs), finely chopped|
|Bacon slice||1 , finely chopped|
Cut veal in pieces about 4" x 6".
Combine bread crumbs, onions, celery, seasoning, bacon, and mix well for stuffing.
Place 1 tablespoon of stuffing in center of meat.
Roll and tie with string, or secure with skewers.
Salt and pepper the birds, then dredge in flour.
Heat skillet, add fat as needed.
Brown veal birds thoroughly over medium-low heat.
Cover and reduce heat to very low.
Cook until tender (about 45 minutes).
Remove veal birds and thicken remaining juices for gravy
