Veal And Tomato Stir Fry

Ingredients
  Olive oil 2 Teaspoon
  Onions 1 Cup (16 tbs), chopped
  Mushrooms 1 Cup (16 tbs), minced
  Garlic 1 Clove (5 gm), chopped
  Veal 10 Ounce, cut into strips
  Canned tomatoes 2 Cup (32 tbs), drained
  Wine vinegar 2 Tablespoon
  Dijon mustard 1 Tablespoon
  Salt To Taste
  Pepper To Taste
  Parsley sprigs To Taste, chopped
Directions

In a large non stick skillet, heat oil.
Cook onions, mushrooms and garlic 5 minutes or so.
Add veal strips.
Sear 5 minutes.
Fold in remaining ingredients.
Season to taste with salt and pepper.
Over low heat, simmer 10 minutes or so.
Spoon veal and vegetables over a bed of brown or wild rice, if desired.
Garnish with parsley.
