In a large non stick skillet, heat oil.
Cook onions, mushrooms and garlic 5 minutes or so.
Add veal strips.
Sear 5 minutes.
Fold in remaining ingredients.
Season to taste with salt and pepper.
Over low heat, simmer 10 minutes or so.
Spoon veal and vegetables over a bed of brown or wild rice, if desired.
Garnish with parsley.
