Veal Marengo

Ingredients
  Oil 3 Tablespoon
  Veal 3 Pound, in cubes (1 Pound Each)
  Wheat flour 2 Tablespoon
  Beef broth 1 Cup (16 tbs)
  Canned spicy tomato sauce 7 1⁄2 Ounce (1 Can)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Thyme 1⁄2 Teaspoon
  Onions 1 Cup (16 tbs), diced
  Garlic 2 Clove (10 gm), minced
  Parsley 1 Tablespoon, chopped
  Bay leaf 1
  Mushrooms 8 Ounce, sliced
Directions

In a microwave oven, preheat a baking dish 7 minutes, on HIGH.
On same setting, heat oil 30 seconds.
Sear veal cubes.
Sprinkle with flour, mixing well.
Fold in broth and tomato sauce.
Cook 3-4 minutes, on HIGH.
Stir once during cooking.
Add remaining ingredients, except mushrooms.
Cover.
Cook 1 hour, on MEDIUM hIGH.
Stir once halfway through cooking.
Remove from oven.
Stir.
Fold in mushrooms.
Cover.
Continue cooking 8-10 minutes or until veal is cooked.
Let stand 5 minutes.
