Veal Scaloppine With Mushrooms
|Veal cutlets||1 Pound|
|Cooking oil||2 Tablespoon|
|Fresh mushrooms||4 Ounce, quartered lengthwise|
|Sherry||1⁄2 Cup (8 tbs)|
|Finely chopped parsley||2 Tablespoon|
1. Combine flour, salt, and pepper; sprinkle over veal slices. Pound slices until thin, flat, and round, working flour mixture into both sides. Cut into 1/4 inch-wide strips.
2. Heat oil in a large wok. Add veal strips and stir-fry over high heat until golden.
3. Sprinkle mushrooms on top and pour sherry over all. Simmer, uncovered, about 15 minutes, or until tender.
4. Toss with parsley and serve.
