Sauteed Veal Brains In Browned Butter
|Lemons||2 , juiced|
|Butter||1⁄2 Cup (8 tbs)|
|Chopped fresh dill||2 Tablespoon|
|Lemon||1 , cut into wedges|
|Flour||1⁄2 Cup (8 tbs), seasoned with salt and pepper|
|Salt||To Taste (For Seasoning The Flour)|
|Pepper||To Taste (For Seasoning The Flour)|
1. Rinse brains thoroughly. Soak in water with ice cubes for 15 minutes. Drain; remove membranes.
2. Pour enough water into a saucepot to cover brains. Add lemon juice and salt; bring to boiling. Reduce heat and drop in brains. Simmer 15 minutes. Drain. Plunge into ice water to cool quickly.
3. Dip brains into seasoned flour.
4. Put butter into a skillet and heat until deep brown. Add brains and saute briefly. Remove to a warm platter. Sprinkle with dill.
