Glazed Turnips

Ingredients
  Turnips 1 Pound (White Or Yellow)
  Butter/Margarine 1 Tablespoon
  Firmly packed light brown sugar 1⁄3 Cup (5.33 tbs)
  Grated orange rind 1⁄2
  Orange 1⁄2 , juiced
  Salt 1⁄4 Teaspoon
  Black pepper 1⁄4 Teaspoon
Directions

1. Peel the turnips and cut them into 1/2-inch cubes. Bring about 1 inch of lightly salted water to a boil in a 2-quart saucepan. Add the turnips, cover, and cook for 15 to 20 minutes. Drain.
2. Meanwhile, melt the butter in a 1-quart saucepan, and add the sugar, orange rind, and orange juice. Simmer the mixture, uncovered, for 2 or 3 minutes, or until it is slightly thickened. Keep warm until the turnips are done.
3. Add the drained turnips to the orange mixture and toss briefly over moderate heat until they are just glazed. Season with the salt and pepper.
