|Chopped celery||1⁄2 Cup (8 tbs)|
|Stock/Water||4 Cup (64 tbs)|
Prepare turkey as for roasting and place pieces of salt pork over breast and legs.
In a covered roaster spread the vegetables and remaining salt pork and place turkey breast up in the mixture.
Cover tightly and cook in moderate oven (350 F.) until tender, about 25 minutes per pound.
Add water or stock after bird has been cooking about 1/2 hour.
During last half hour, remove cover and salt pork from turkey and allow to brown.
Serve with gravy.
