Bacon Weave Turkey

his was our Thanksgiving dinner and also my entry into "Linda's Pantry" drawing. This was my first attempt at a bacon weave turkey, and I was blown away how easy it was, and better yet, how great the turkey came out. My wife Terynia, cooked all the other dishes that you see in the video, and she did a fantastic job, to say the least! I'm so full, I don't think I can eat for days!!!!, LOL )

Ingredients

Turkey 1
Bacon strips 2 Pound
For the brine
Hot water 2 Gallon
Kosher salt 2 Cup (32 tbs) (Soaked in brine and brine discarded)
Brown sugar 1 1/2 Cup (24 tbs)
Peppercorn 2 Tablespoon
Maple syrup 1 Cup (16 tbs)
Jack daniels 1 Cup (16 tbs)
Onion 1 , quartered
Bay leaves 2
For the stuffing
Onion 1
Garlic clove 6
For rubbing on the turkey
Barbecue rub 1 Tablespoon (or as needed)
Butter 3/4 Cup (12 tbs)
Maple syrup 1/4 Cup (4 tbs)

Directions

GETTING READY

1. In a large bucket or ice box, combine all the brine ingredients. Place the Turkey in it and allow to brine overnight. You can add some ice to bring down the temperature of the water.

2. Prepare the grill.

3. Stuff the turkey cavity with onion and garlic.

4. Rub the turkey with barbecue seasoning very well, evenly covering all sides.

5. In a bowl, combine the butter and maple syrup, rub this mixture generously on the turkey as shown in the video. Also rub some of this mixture under the skin.

6. On a tray, Place the bacon strips and prepare a weave as shown in the video. Place this weave on the Turkey. Similarly prepare another weave with bacon strips and carefully place it on the turkey breast. Secure with toothpicks.

7. Wrap the wings and legs of the bird with bacon strips.

MAKING

8. Place the turkey on the grill and allow to cook. Keep monitoring the internal temperature with a digital thermometer.

SERVING

9. Carve and serve on your thanksgiving table.
