Turkey Breast Madeira
|Frozen bone in turkey breast||4 Pound, thawed|
|For madeira glaze|
|Red currant jelly||1⁄2 Cup (8 tbs)|
|Madeira/Apple juice||2 Tablespoon|
1 Place turkey breast, skin-side-up on microwave roasting rack, in 2-quart (12 x 7) glass baking dish. Brush with 1/2 of Madeira Glaze.
2 Microwave for 40 minutes on HIGH. Brush with remaining glaze and continue cooking for 35 to 40 minutes on 7 (MED. HIGH), or until meat cut near bone is no longer pink (about 180°F). Some areas may cook more rapidly than others; cover these with small pieces of foil to slow cooking. Let stand, covered with foil, 10 minutes before serving. Madeira Glaze: Combine all glaze ingredients in small mixing bowl; beat with rotary beater until smooth. 8 to 12 Servings
