Pineapple Turkey Breast
|Skinless boneless turkey breast||4 Ounce, cut into 1 inch cubes|
|Finely chopped onions||1⁄4 Cup (4 tbs)|
|Ground cinnamon||1⁄8 Teaspoon|
|Ground cumin||1⁄8 Teaspoon|
|Pineapple cubes||1⁄2 Cup (8 tbs)|
|Lime juice||1 Tablespoon|
|Minced fresh parsley/Minced fresh coriander||1 Tablespoon|
In a large no-stick frying pan over medium heat, saute the turkey and onions in the oil for 5 minutes, or until the turkey is cooked through.
Stir in the cinnamon, cumin and paprika.
Add the pineapple, raisins and lime juice to the pan.
Cook for 2 minutes.
Serve sprinkled with the coriander or parsley.
