Roasted Turkey With Sage
|Lemon juice||2 Tablespoon|
|Thyme leaves||1⁄8 Teaspoon|
|Rosemary leaves||1⁄8 Teaspoon|
|Ground sage||1⁄8 Teaspoon|
|Chicken broth||3⁄4 Cup (12 tbs)|
1 Preheat the oven to 350Â°Fahrenheit.
2 Remove excess fat from the turkey.
3 Using paper towels, dry the turkey inside out.
4 Sprinkle the cavity with lemon juice and rub over the skin.
5 Sprinkle the cavity with seasoning.
6 Using a skewer, close the neck cavity and truss turkey.
7 Prepare a cooking rack by spraying with a nonstick cooking spray, Set in a shallow roasting pan.
8 On the rack, place the turkey breast-side up.
9 If meat thermometer is to be used, insert into the center of thigh, close to body,carefully so the thermometer does not touch the bone.
10 With a loose tent of foil, cover turkey and roast for 2 hours.
11 Continue to roast for another 30 minutes, uncovered basting ocassionally.
12 Let stand for 15 minutes before carving.
13 Discard the skin and carve.
14 Serve 3 ounces sliced turkey per portion.
