Breast Of Turkey In Marsala

Ingredients
  Turkey breast meat 450 Gram, thinly sliced
  Lemon 1⁄2
  Seasoned flour 1 Teaspoon (Leveled)
  Butter 75 Gram
  Marsala 4 Tablespoon
  Grated parmesan 4 Tablespoon
  Chicken stock 4 Tablespoon
Directions

A delicious Italian way of cooking turkey or chicken breast.
Cut the turkey into convenient size pieces for serving and flatten with a knife.
Rub over with the cut lemon, then coat with seasoned flour.
Melt the butter in a large frying pan and, over gentle heat, fry the breasts for 10 minutes, turning until golden on both sides.
Pour over Marsala and allow to bubble for a minute or so.
Sprinkle each fillet thickly with Parmesan and moisten with chicken stock.
Cover pan and cook gently for another 5 to 10 minutes, until turkey is tender and the cheese melted.
Serve with pan juices poured over.
Braised chicory or celery, and new potatoes, are good vegetables to serve with this.
