Skillet Turkey Scramble

Ingredients
  Onion 1 Medium, chopped to make 1/2 cup
  Garlic 1 Clove (5 gm), minced
  Butter/Margarine 2 Tablespoon
  Salt 1 Teaspoon
  Chili powder 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Cayenne 1 Dash
  Bay leaf 1
  Canned stewed tomatoes 2 Pound (2 Cans, 1 Pound Each)
  Diced cooked turkey 2 Cup (32 tbs)
  Chopped ham sticks/2 cups diced cooked ham 8 Ounce, diced (1 Can)
  Regular rice 1 Cup (16 tbs), uncooked
  Chopped parsley 1 Tablespoon
Directions

MAKING
1. In large frying pan saute onion and garlic in butter or margarine just until soft, stir in seasonings and remaining ingredients and cover.
2. Let it simmer with frequent stirring for 40 minutes such that the rice is tender and the liquid is absorbed.

SERVING
3. To serve, remove bay leaf.
