Turkey, Tomato And Tarragon Burgers

Ingredients
  Sun dried tomato halves in oil 8 , drained and chopped
  Minced turkey 1 Pound (500 Gram)
  Chopped fresh tarragon 1 Tablespoon
  Red onion 1⁄2 , finely chopped
  Paprika 1⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
  Smoked pancetta slices/Rindless streaky bacon, cut in half 4
  Ciabatta rolls 4
  Shredded radicchio 1 Tablespoon
  Cos lettuce 1 Tablespoon
Directions

MAKING
1. In a liquidizer or food processor puree the sun-dried tomatoes, turkey and tarragon such that smooth.
2. Into a bowl mix the mixture with the onion and season with the paprika and salt.
3. Mix and shape into 4 burgers.
4. Over each burger stretch 2 strips of pancetta and using cocktail sticks soaked in water for 30 minutes secure the burger.
5. On an oiled barbecue grill over hot coals cook on for 20-25 minutes turning frequently.

SERVING
6. To serve, place in the ciabatta rolls with shredded lettuce.
