Turkey Island Style

Ingredients
  Sugarless canned pineapple chunks 1 Cup (16 tbs), drained (Reserve Juice)
  Tomato juice 1⁄2 Cup (8 tbs)
  Cornstarch 1 Tablespoon
  Soy sauce 1 Tablespoon
  Skinless boneless cooked turkey 8 Ounce, cut into 2-inch strips
  Cherry tomatoes 10 , cut into halves
  Green bell pepper 1 Medium, seeded and cut into 1-inch pieces
  Drained canned water chestnuts 1⁄2 Cup (8 tbs), thinly sliced
  Chinese snow peas 1⁄2 Cup (8 tbs)
Directions

In large skillet combine reserved pineapple juice, tomato juice, cornstarch, and soy sauce.
Cook over low heat, stirring constantly with wire whisk, until mixture thickens.
Add pineapple chunks, turkey, and vegetables, and cook until heated (green pepper should be tender-crisp).
