Turkey Island Style
|Sugarless canned pineapple chunks||1 Cup (16 tbs), drained (Reserve Juice)|
|Tomato juice||1⁄2 Cup (8 tbs)|
|Soy sauce||1 Tablespoon|
|Skinless boneless cooked turkey||8 Ounce, cut into 2-inch strips|
|Cherry tomatoes||10 , cut into halves|
|Green bell pepper||1 Medium, seeded and cut into 1-inch pieces|
|Drained canned water chestnuts||1⁄2 Cup (8 tbs), thinly sliced|
|Chinese snow peas||1⁄2 Cup (8 tbs)|
In large skillet combine reserved pineapple juice, tomato juice, cornstarch, and soy sauce.
Cook over low heat, stirring constantly with wire whisk, until mixture thickens.
Add pineapple chunks, turkey, and vegetables, and cook until heated (green pepper should be tender-crisp).
