Baked Turkey Croquettes
|Salad dressing/Mayonnaise||2⁄3 Cup (10.67 tbs)|
|Worcestershire||1 1⁄2 Teaspoon|
|Finely chopped onion||1 Tablespoon|
|Minced parsley||1 Tablespoon|
|Lemon juice||1 Tablespoon|
|Cooked rice||2 Cup (32 tbs)|
|Ground cooked turkey||3 Cup (48 tbs), or minced|
In a bowl, combine the salad dressing with the Worcestershire, onion, parsley, lemon juice, salt, and pepper.
Stir in the cooked rice and the turkey meat.
Chill for several hours.
To shape the croquettes, press about 1/4 cup of the mixture at a time with your hands to form logs, balls, egg shapes, or rectangles.
Roll in the fine crumbs to coat evenly all over.
Place in a shallow ungreased baking pan and bake in a very hot oven (450°) for 20 to 25 minutes, or until nicely browned.
You might garnish each serving with a sprig of parsley.
