Nut Crusted Turkey Breast
|Bone in turkey breast half||3 1⁄2 Pound (1 Piece)|
|Olive oil/Cooking oil||1 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Slivered almonds||1⁄8 Cup (2 tbs)|
|Pine nuts/Slivered almonds||1⁄8 Cup (2 tbs)|
|Ground coriander||1 Teaspoon|
|Ground cinnamon||1⁄4 Teaspoon|
|Coarsely ground black pepper||1⁄4 Teaspoon|
|Orange marmalade||1⁄4 Cup (4 tbs)|
Remove skin from turkey breast.
Place turkey breast on a lightly greased rack in a shallow .roasting pan.
Combine oil, salt, and garlic; brush over breast.
Insert a meat thermometer into thickest part of breast, not touching bone.
Roast in a 375° oven for 30 minutes.
Meanwhile, in a blender container or food processor bowl combine almonds and pine nuts.
Cover and blend or process until finely chopped.
In a small bowl combine the finely chopped nuts, coriander, cinnamon, and pepper.
Remove turkey breast from oven.
Brush surface with orange marmalade.
Sprinkle with nut mixture; press gently so nuts adhere.
Roast for 30 to 45 minutes more or until meat thermometer registers 170°F.
Remove from oven.
Cover loosely with foil; let stand for 15 minutes before slicing.
