Turkey Slices On Vegetable Bed

Ingredients
  Butter/Margarine 1 Tablespoon
  Small mushrooms 8 Ounce (Fresh)
  Frozen peas 20 Ounce, Defrosted
  Tomatoes 4 Small, peeled, halved
  Chopped parsley 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Vegetable oil 2 Tablespoon
  Cooked turkey breast slices 4
  Seasonings To Taste
Directions

Melt butter in 2-quart saucepan.
Add mushrooms; saute lightly.
Add peas; cover.
Heat gently 3 minutes.
Add tomatoes and parsley; simmer 3 minutes.
Season with salt.
Heat oil in separate pan; saute turkey 2 to 3 minutes on each side or until golden brown.
Season to taste.
Arrange vegetables on heated platter. (Use slotted spoon if too much liquid has accumulated.)
Arrange turkey slices on vegetables.
