How to Grill Perfect Holiday Turkey

Gary House grills perfect Turkey for the Holidays! Using short stock and herbed butter for a moist and tender turkey with incredible stock perfect for delicious turkey gravy.

Ingredients

Whole turkey 15 Pound
Chicken pieces 2 Pound ((thighs, legs))
Carrot 1 Large , chopped
Celery stalk 1 , chopped
Onion 1 Large , chopped
Olive oil 4 Tablespoon
Dry white wine 1 Cup (16 tbs)
Homemade chicken stock 4 Cup (64 tbs)
For butter stuffing:
Butter stick 2 ((softened))
Fresh thyme 2 Teaspoon
Freshly ground black pepper 2 Teaspoon
Salt 1/2 Teaspoon
For brine solution:
Water 6 Quart
Kosher salt 1 1/2 Cup (24 tbs)
Thyme 1 Ounce , chopped ((1 bunch))
Onion 1 , chopped
For coating:
Vegetable oil 1 Tablespoon
Salt 1/2 Teaspoon
Pepper 1/2 Teaspoon
Flavored butter 1/2 Cup (8 tbs) , melted
For stuffing inside turkey cavity:
Onion 1 , quartered
Carrot 1 , peeled
Garlic head 1/2
Thyme sprigs 6
Bay leaves 3 Small

Directions

GETTING READY:

Soak turkey in a brine solution which is a mixture of water, kosher salt, thyme and onion, overnight.

Preheat the grill to 400°F with roast pan.

 

MAKING:

Heat olive oil on the roast pan. Add chicken pieces, carrot, celery, onion and cook until the ingredients get roasted or for approximately 20 minutes.

Add white wine an stir well.

Place the roasting rack in the middle of the pan as shown in the video and add chicken stock. Close the lid and allow the rack to heat.

In a bowl, combine butter, thyme, black pepper, salt and mix well.

Rub the butter mixture underneath the skin of brine-soaked turkey as shown in the video.

Coat the turkey with vegetable oil completely. Stuff onion, carrot, garlic, bay leaves and thyme sprigs inside the cavity of turkey.

Line the roasting rack with aluminium foil(with holes as shown in the video) and place the turkey over it (breast side down).

Grill for 4-4 1/2 hours at 400°F with covered lid. After an hour flip the turkey and brush with melted butter.

By the end of second hour, brush again with melted butter and cover with an aluminium foil.

Once done, allow it to cool for minimum of 20 minutes.
