Tuna En Casserole

Ingredients
  Onion 1 Medium
  Fat 4 Tablespoon
  Flour 4 Tablespoon
  Tomato juice 2 Cup (32 tbs)
  Sugar 1 Teaspoon
  Paprika 1 Teaspoon
  Salt 3⁄4 Teaspoon
  Cayenne 1 Teaspoon
  Lemon juice 1 Tablespoon
  Tuna 1 Cup (16 tbs), flaked and cooked
  Seasoned mashed potatoes 2 Cup (32 tbs)
Directions

GETTING READY
1.Start by preheating the oven to 350F degrees
MAKING
2.Chop onion, add to fat and cook until tender
3.Blend in flour and add tomato juice, sugar, paprika, salt, cayenne and lemon juice
4.Cook, stirring constantly, until thickened
5.Add tuna and pour into casserole
6.Cover with potatoes
7.Bake in moderate oven for 20 minutes or until potatoes are browned
SERVING
8.Serve with cornbread muffins or salads
