Cheesy Tuna Melts

These zesty little treats provide an updated, lower fat twist on an old classic. Perfect for lunch or a quick weeknight dinner, you will enjoy the raves you get from all who try these!
Ingredients
  Low fat cheddar 1 Cup (16 tbs), finely shredded (Extra Old)
  Multi grain bread slices 4 (High Quality)
  Tuna 1 Can (10 oz), drained (Sodium Reduced)
  Green onion 1 Medium, chopped
  Celery stalk 1 Medium, diced
  Banana peppers 1⁄4 Cup (4 tbs) (Hot Pickled)
  Black pepper 1⁄4 Teaspoon
  Low fat mayonnaise 1⁄4 Cup (4 tbs)
  Pineapple tidbits 1 Cup (16 tbs) (Drained)
Directions

MAKING
1. Mix the first seven ingredients together in a large bowl
2. Lightly toast the bread
3. Spread tuna mixture in equal amounts over all four slices and top with equal amounts of the cheese.
4. Place on a baking sheet and broil approximately 2-3 minutes until the cheese is golden and bubbly.

SERVING
5. Serve immediately.
