Fresh Albacore Saute Amandine

Ingredients
  Fresh albacore steaks 3 Pound (6 Steaks, Each 1 Inch Thick And 1/2 Pound)
  Flour 1⁄2 Cup (8 tbs)
  Slivered blanched almonds/Commercially prepared chopped buttered almonds 1 Cup (16 tbs)
  Minced parsley 3 Tablespoon
  Lemon wedges 6
  Salt To Taste
  Pepper To Taste
Directions

Coat fish with flour.
Melt butter in skillet.
Brown fish on one side over medium heat.
Season with salt and pepper to taste.
Carefully turn steaks with a pancake turner.
Add almonds and parsley.
Brown fish on other side.
If necessary to prevent sticking, add a little more butter.
Remove fish to hot dish.
Pour pan juices over it.
Garnish with lemon wedges.
