Fresh Albacore Saute Amandine
|Fresh albacore steaks||3 Pound (6 Steaks, Each 1 Inch Thick And 1/2 Pound)|
|Flour||1⁄2 Cup (8 tbs)|
|Slivered blanched almonds/Commercially prepared chopped buttered almonds||1 Cup (16 tbs)|
|Minced parsley||3 Tablespoon|
Coat fish with flour.
Melt butter in skillet.
Brown fish on one side over medium heat.
Season with salt and pepper to taste.
Carefully turn steaks with a pancake turner.
Add almonds and parsley.
Brown fish on other side.
If necessary to prevent sticking, add a little more butter.
Remove fish to hot dish.
Pour pan juices over it.
Garnish with lemon wedges.
