Tuna Poor Boys
|French bread loaf||1|
|Olive oil/Vegetable oil||2 Tablespoon|
|Tuna||2 Can (20 oz), drained, flaked|
|Tomatoes||2 Medium, sliced|
|Onion||1 Small, thinly sliced and separated into rings|
|Dried basil||1 Teaspoon|
|Chopped parsley||1 Tablespoon|
|Margarine/Butter||2 Tablespoon, softened|
Cut bread horizontally in half.
Drizzle 1 tablespoon of the oil over bottom half of bread; cover evenly with tuna.
Arrange tomatoes and onions over tuna.
Drizzle with remaining oil and sprinkle with herbs.
Top with lettuce.
Spread margarine on remaining bread half.
Place on top of sandwich.
Secure loaf with wooden picks.
Cut into 4 pieces.
