Truffle And Fly Fish Caviar

Ingredients
  White balsamic vinegar 1⁄2 Cup (8 tbs)
  Olive oil 1 1⁄2 Cup (24 tbs)
  Lime juice 1 Tablespoon
  Finely chopped shallot 2 Teaspoon
  Canned black truffle 1 Small, finely chopped
  Caviar 2 Teaspoon
  Finely chopped chervil 1 Teaspoon
  Lemon balm 1 Teaspoon, chopped
  Crushed black pepper To Taste
  Salt To Taste
Directions

MAKING
1. In a bowl, whisk the vinegar, oil and lime juice
2. To it, add the shallot, truffle, caviar, chervil and lemon balm and season with salt and pepper

SERVING
3. Serve along with Dungeness crab and fennel roulade
