Mocha Truffle Cookies
|Butter||4 Ounce, chopped (125 Gram)|
|Dark chocolate||3 Ounce, broken into pieces (90 Gram)|
|Instant coffee powder||2 Tablespoon|
|Flour||10 Ounce (2 1/2 Cups / 315 Gram)|
|Cocoa powder||1 1⁄2 Ounce (1/2 Cup / 45 Gram)|
|Baking powder||1 Teaspoon|
|Eggs||2 , lightly beaten|
|Caster sugar||8 Ounce (1 Cup / 250 Gram)|
|Brown sugar||5 1⁄2 Ounce (1 Cup / 170 Gram)|
|Vanilla essence||2 Teaspoon|
|Pecans||4 Ounce, chopped (125 Gram)|
1. Place butter, chocolate and coffee powder in a heatproof bowl set over a saucepan of simmering water and heat, stirring, until mixture is smooth. Remove bowl from pan and set aside to cool slightly.
2. Sift together flour, cocoa powder and baking powder into a bowl. Add eggs, caster sugar, brown sugar, vanilla essence and chocolate mixture and mix well to combine. Stir in pecans.
3. Drop tablespoons of mixture onto greased baking trays and bake at 180°C/350°F/ Gas 4 for 12 minutes or until puffed. Stand cookies on trays for 2 minutes before transferring to wire racks to cool.
