Chocolate Rum Truffles
|Semisweet chocolate morsels||6 Ounce (1 Package)|
|Rum cocoa||1 Tablespoon|
|Powdered sugar||3 Tablespoon|
|Unsalted butter||3 Tablespoon|
Place chocolate morsels in top of a double boiler; bring water to a boil.
Reduce heat to low; cook until chocolate melts.
Add butter and powdered sugar, stirring until sugar dissolves.
Remove from heat Add egg yolks, one at a time, beating at medium speed of an electric mixer.
Stir in rum.
Pour mixture into a bowl; cover, and let sit for 12 to 24 hours in a cool, dry place.
Shape mixture into 1-inch balls; roll in cocoa.
Freeze about 1 hour.
Store in an airtight container in refrigerator.
