Christmas Pudding Truffles (Chocolate And Marzipan)

Betty Bannerman Busciglio makes one of her favorite Christmas dessert. A chocolate and marzipan truffle treat.

Ingredients

Butter 2 Ounce
Almond extract 1/4 Teaspoon
Sugar 1/4 Cup (4 tbs)
Almonds 3 Ounce , finely ground
Cocoa 2 Tablespoon , sifted
Rum extract 1 Tablespoon
Pound cake 12 Ounce
Marzipan 6 Ounce , shaped into small balls
Bittersweet chocolate 10 Ounce (for dipping)
White chocolate 2 Ounce (for decorating)
Confectioners' sugar 1/2 Cup (8 tbs) (mixed with a few drops milk to make a very stiff frosting)
Green food colouring 4 Drop
Red food colouring 4 Drop

Directions

MAKING:

1. Cream butter and sugar until fluffy.

2. Add almond extract, almonds and cocoa. Mix well.

3. Add cake crumbs and rum extract and mix well.

4. Shape into small balls and press marzipan into center.

5. Dip into chocolate. Place on waxed paper until set.

SERVING:

6. Decorate with white chocolate and a few drops of red and green frosting to resemble holly. Enjoy.
