Liqueur Rum Truffles
|Cake crumbs||1 Cup (16 tbs)|
|Ground almonds||1⁄2 Cup (8 tbs)|
|Grated dark chocolate||1 1⁄4 Tablespoon|
|Liqueur/Rum||1 1⁄4 Tablespoon|
|Chocolate sprinkles||1 Tablespoon|
Place all ingredients in a mixing bowl, mix together.
Stir in egg yolk and 1 tablespoon of your favorite liqueur (curacao or grand marnier or tia maria are delicious) and mix to a smooth paste.
Divide mixture into eighteen to twenty four equal parts, as desired, about a heaped teaspoon to each part, and roll gently in cool, dry hands into a ball.
Roll balls in chocolate, place in paper cases and refrigerate in a covered plastic container until firm and set.
Serve as a petit four with .coffee.
These are very good to serve at a buffet party, in place of a dessert, as they are so easy to eat standing up.
