Oven Crispy Trout

Ingredients
  Trout 6 Medium
  Shredded swiss cheese 1⁄2 Cup (8 tbs)
  Egg 1
  Soft margarine 1⁄4 Cup (4 tbs)
  Milk 1⁄4 Cup (4 tbs)
  Chopped parsley 1⁄2 Cup (8 tbs)
  Dry fine toasted breadcrumbs 3⁄4 Cup (12 tbs)
  Margarine 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Preheat oven to 500°F.
Wash and dry pan dressed trout, season with salt and pepper.
Brush fish cavity with melted margarine and sprinkle with parsley.
Blend cheese and bread crumbs; set aside.
Beat eggs, milk and salt lightly.
Dip each trout into milk mixture, then crumbs, coating outside well.
Arrange fish on generously greased shallow baking pan.
Leftover crumbs may be sprinkled over top.
Dot with margarine.
Bake in very hot oven 15 to 20 minutes, or until fish is browned and flakes when pierced with fork.
