Trout Del Nera
|Olive oil||3 Tablespoon|
|Chopped parsley||1⁄2 Cup (8 tbs)|
|Rosemary sprigs||2 , chopped|
|Herbs||1 Teaspoon (For Garnish)|
Clean trout and wipe over with dampened kitchen paper. Arrange on a grilling rack. Brush trout with oil, season with salt and pepper. Combine herbs and sprinkle half over the fish. Under a preheated moderate grill, cook about 5 minutes, turn, brush with oil, season with salt and pepper, sprinkle over remaining herbs and grill a further 5 minutes. Just before serving a little more olive oil is trickled over them. Garnish with herbs and serve with lemon wedges. Serves 4.
