Oven-Poached Trout

Ingredients
  Trout 4 Pound
  Chopped carrot 1 Tablespoon
  Chopped onion 1 Tablespoon
  Chopped celery 1 Tablespoon
  Parsley sprig 1
  Butter 1 Tablespoon
  Garlic 1 Clove (5 gm)
  Bay leaf 1
  Salt 1 Teaspoon
  Vinegar 1 Tablespoon
  Cream 1⁄2 Cup (8 tbs)
  Catsup 1⁄2 Cup (8 tbs)
Directions

"Place trout in baking pan.
Combine carrot, onion, celery, parsley, butter, clove, bay leaf, salt, vinegar and 1 quart water; blend well.
Pour over trout.
Bake at 375 degrees for 30 minutes.
Remove trout to heated platter.
Mix cream and catsup; heat through.
Serve with trout.
