Stuffed Mountain Trout
|Fresh trout||4 Pound|
|Shrimp||1⁄2 Pound, peeled,deveined,chopped|
|Haddock||1⁄2 Pound, poached and flaked|
|Minced onion||2 Tablespoon|
|Minced chives||2 Tablespoon|
|Garlic bread||2 Cup (32 tbs), diced in small pieces|
|Heavy cream||1 Cup (16 tbs)|
|Seafood seasoning||1⁄2 Teaspoon (Old Bay)|
|Worcestershire sauce||1⁄2 Teaspoon|
|Dry mustard||1 Teaspoon|
|Lemon juice||2 Tablespoon|
|Flour||1 Cup (16 tbs)|
|Olive oil||4 Tablespoon|
|Slivered almonds||1⁄2 Cup (8 tbs) (For Garnish)|
|Lemon juice||To Taste (For Garnish)|
|Chopped parsley||1 Tablespoon (For Garnish)|
1)Preheat oven to 375 degrees
2) Place trout on board,clean and remove fins and backbone.
3)Do not cut through the back skin
4)In a food grinder,mix shrimp,haddock,onions,chives and bread.
5)Now add yolks and cream carefully until its absorbed.
6)Now add the seasoning and lemon juice.
7)Now take the trout and stuff it with the filling.
8)Bind with an ovenproof string.
9)Now roll in the flour.
10)Heat oil in a pan,and fry till golden brown on each side.
11)Now pick a baking dish,put the trout, cover with foil and bake for 10 minutes.
12)Now remove the foil,and bake for another 5 minutes.
13)Pick a saute pan,and saute the almonds in butter till light brown,add the lemon juice and parsely.
14)Pour the sauce over the fish and serve immediately.
