Smoked Trout Appetizer

Ingredients
  Smoked trout 3
  White bread slice 6
  Heavy cream 6 Tablespoon
  Horseradish 2 Tablespoon, grated (To Taste)
  Parsley 1 Tablespoon, finely chopped
  Crisp lettuce leaves 6 Large
  Tomato slices 6
  Black olives 6 Large, pitted and halved
  Lemon wedges 6
Directions

GETTING READY
1. Using a large filleting knife, carefully skin the smoked trout before filleting.
2. Halve each fillet and keep aside.

MAKING
3. In a small bowl, beat heavy cream adding 1-2 tablespoons iced water, until firm.
4. Fold in grated horseradish.

FINALIZING
5. Toast bread slices in a conventional toaster or in the oven.
6. Slice off crusts.
7. Spread horseradish cream over each toast.
8. Arrange 2 pieces of fish fillets on each toast.
9. Sprinkle with a pinch of finely chopped parsley.
10. Cut each toast diagonally into 2 triangles.

SERVING
11. On each plate arrange 2 toast triangles.
12. Garnished with lettuce, tomato, black olives, and lemon wedges.
13. Serve while toast is crisp.
