Trout In Chermoula

Ingredients
  Onion 1 , finely chopped
  Garlic 4 Clove (20 gm), finely chopped
  Ground cumin 1⁄2 Teaspoon
  Paprika 1⁄2 Teaspoon
  Cayenne pepper 1⁄2 Teaspoon
  Powdered saffron 1⁄2 Teaspoon
  Chopped coriander 1⁄2 Cup (8 tbs)
  Olive oil 1⁄2 Cup (8 tbs)
  Lemon juice 1 Tablespoon (Juice Of 1 Lemon)
  Salt 1⁄2 Teaspoon
  Trout 2 , cleaned & dried
  Oil 1 Tablespoon
Directions

MAKING
1. Marinate the trout in the ingredients for an hour, rubbing the mixture well in.
2. Take out of the marinade, dredge in flour and fry in the hot oil for 5 minutes per finger thickness.
3. Stir in the marinade and serve hot with chopped coriander leaves.
