Trout En Papillote
|Steelhead trout||1 (4 To 5 Pounds)|
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Chopped fresh mint||1 Tablespoon|
Have trout cleaned but do not remove head.
Sprinkle lightly inside and out with salt and pepper.
Arrange a large sheet of foil in bottom of shallow baking dish.
Spread butter on foil.
Put fish on foil and sprinkle with mint.
Roll up and twist ends of foil.
Bake fish in preheated hot oven (400°F.) for about 50 minutes.
Put, still wrapped, on hot platter.
Cut portions through bones and all.
Serve with cream sauce or other preferred sauce.
Makes 4 to 6 servings.
