Hot Texas Red Chili
|Coarsely ground lean beef||3 Pound|
|Olive oil||1⁄4 Cup (4 tbs)|
|Chili powder||6 Tablespoon|
|Garlic cloves||10 , chopped or pressed|
|Red cayenne pepper||1 Teaspoon|
|Yellow corn meal||6 Tablespoon|
With olive oil hot in a large pot, add meat and sear over high heat, stirring constantly until meat is grey in color (not brown).
Add 1 quart of water and cook at bubbling simmer about 1 1/2 hours.
Add all ingredients except flour and corn meal.
Cook 30 minutes more.
Mix flour and corn meal in 1/2 cup water and add to mixture.
Cook 5 minutes more to determine if more water is needed.
