Salmon Salsa

Barry's Brother-in-law Randy makes a very healthy and light salmon dish.
Ingredients
  Salmon fillets 2
  Olive oil 3 Tablespoon, divided
  Salt and pepper To Taste
  Lemon 1
  Zest of lemon 1 , divided
  Onion 1⁄2 , finely chopped
  Tomatoes 100 Gram, diced
  Coriander 1⁄4 Cup (4 tbs), finely chopped
Directions

MAKING
1. In a large bowl, pour in 2 tbsp. of olive oil. Season with salt, pepper, lemon juice and half of lemon zest. Mix well and add in the salmon. Rub the dressing over the salsa generously.
2. In a sauté pan, add in the olive oil and heat on high. Place the salmon and cook for 5 minutes on each side.
3. Into the left-out dressing, add in the remaining lemon zest, onion, tomatoes and coriander. Toss well.

SERVING
4. In a serving plate, place the salmons and top with salsa. Serve and enjoy!
