California Crab Salad Sandwich
|Avocado||1 , peeled and cut into thin wedges|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Crab meat||6 Ounce, flaked|
|Celery rib||1⁄2 Small, diced|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Whole wheat toast||6 (Thin Pieces)|
|Whole wheat toast slice||6 (Thin)|
|Alfalfa sprouts||1⁄2 Cup (8 tbs)|
Brush avocado with part of the lemon juice.
Combine crab meat, celery, mayonnaise and remaining lemon juice; mix well.
Place a lettuce leaf on each piece of toast.
Top with crab salad and an avocado slice.
Garnish with a generous sprinkling of alfalfa sprouts.
Makes 6 servings.
