Ingredients
  Salt To Taste
  Pepper To Taste
  Carrots 2 1⁄2 Pound (Peeled, Medium)
  Candied ginger 2 Teaspoon, finely chopped
  Butter/Margarine 4 Tablespoon (Divided)
  Evaporated milk 2 Tablespoon
  Walnuts 1⁄8 Cup (2 tbs), chopped
Directions

MAKING
1) In a saucepan of simmering salted water, cook the carrots till tender with the lid on
2) Drain the cooked carrots into a colander
3) Using a fork mash the carrots and season with salt and pepper, ginger and 2 tablespoons of butter
4) Mix well by adding the milk
5) Place the carrot mixture in a 1 quart casserole
6) Sprinkle in with nuts and dot with 2 tablespoons of butter
7) Bake in the oven for 30 minutes at 350F

SERVING
8) Serve warm
