|Garlic||1 Clove (5 gm), minced|
|Onion||1⁄2 Cup (8 tbs), chopped|
|Green pepper||1⁄4 Cup (4 tbs), chopped|

|Carrots||6 , cut in pieces|
|Dry sherry||2 Cup (32 tbs)|
1)With a damp cloth, wipe the chicken pieces. Add salt and pepper and season them.
2)In a heavy skillet, heat the oil and brown the pieces.
3)Transfer the pieces to a bowl and keep aside.
4)Put in garlic, onion, green pepper, whole onion and carrots. Sauté and slightly brown them.
5)Finally, put in the sherry, bay leaf, rosemary and the browned chicken pieces.
6)Cover the skillet with a lid and cook for 45 minutes or till the chicken is tender. Cook over low coals.
