California Caviar Dip
|Creme fraiche||3⁄4 Cup (12 tbs)|
|Cream cheese||1⁄4 Cup (4 tbs)|
|Chives||1 Tablespoon, chopped|
|Trout roe caviar||2 Ounce (California Variety)|
|Whitefish caviar||2 Ounce (California Roe Variety)|
|Bowfin roe caviar||2 Ounce (California Variety)|
In a glass or cermic bowl, whisk together crème fraiche and cream cheese until smooth. Right before serving, lightly fold in chives and caviar with a spatula until just combined being careful not to break the eggs. Season with salt and pepper to taste if desired. Place bowl over ice and serve immediately with a thin lightly salted or unsalted tortilla or potato chip.
