Sole California

Ingredients
  Corn oil/Margarine 2 Tablespoon, divided
  Sole fillets 1 Pound
  Fresh nectarines 2 , pitted and thinly sliced
  Fresh lemon juice 2 Tablespoon
  Fresh parsley 2 Tablespoon
Directions

In a large skillet over medium heat melt 1 tablespoon margarine.
Cook fillets for 2 to 3 minutes on each side or until brown.
To a warm platter remove fillets; keep warm.
To the skillet add remaining 1 tablespoon margarine.
Add nectarines and lemon juice.
Heat to serving temperature.
Spoon over fillets.
Sprinkle with parsley.
