Pennsylvania Fruit Salad
|Steamed cottage cheese||2 Cup (32 tbs) (Large Curd)|
|Walnuts||1⁄2 Cup (8 tbs), broken|
|Apple butter||1⁄4 Cup (4 tbs)|
1. In medium bowl combine cottage cheese with walnuts. Line a serving platter with lettuce; mound cottage cheese mixture in center; then top with apple butter.
2. Surround cottage cheese alternately with fruits. (For our salad, we chose peaches and bananas, but raspberries, pears, blueberries, or apricots would be nice, too.)
