Victoria Sauce

Ingredients
  Rhubarb 2 Quart, chopped
  Raisins 1 1⁄2 Cup (24 tbs), chopped
  Onion 1⁄2 Cup (8 tbs), chopped
  Brown sugar 3 1⁄2 Cup (56 tbs)
  Vinegar 1⁄2 Cup (8 tbs)
  Allspice 1 Teaspoon
  Cinnamon 1 Teaspoon
  Ginger 1 Teaspoon
  Salt 1 Teaspoon
Directions

Combine rhubarb, raisins, onion, sugar and vinegar in a large sauce pot.
Cook until thick, about 25 minutes.
As mixture thickens, stir frequently to prevent sticking.
Add spices; cook 5 minutes longer.
Pour hot into hot jars, leaving 1/4 inch head space.
Adjust caps.
Process 15 minutes in boiling water bath.
