London Broil

Ingredients
  Flank steak 1 (about 1 1/2 lbs, trimmed of fat)
  Salt To Taste
  Pepper To Taste
  Butter/Maragarine 1 Ounce (for topping, if desired) (Optional)
Directions

Place steak on a grill 4 to 6 inches above a solid bed of hot coals (you should be able to hold your hand at grill level for no more than 2 to 3 seconds).
Cook, turning once, until meat is done to your liking (cut to test) about 10 minutes for rare, 15 minutes for medium-rare.
You may also broil meat.
Place on a rack in a broiler pan (about 12 by 15 inches) and broil 4 to 5 inches below heat, turning once, just until meat is done to your liking (cut to test) about 10 minutes for rare, 15 minutes for medium-rare.
Use a sharp knife to cut meat across the grain into thin, slanting slices.
Season with salt and pepper; top each serving with a pat of butter, if desired.
